Eat with a spoon, on a chip, on a taco, in a burrito or over a salad. Let it spill and tumble over the sides of veggie burger or pile it high atop a bowl of chili.
Now, that’s what I call versatility.
¼ cup Black Beans, rinsed & drained
¼ Yellow Onion, chopped into smallish pieces
3 Roma Tomatoes, diced
2 tbsp chopped Green Pepper
½ – 1 tsp Mild Chili Powder
Remove corn kernels from cob and place into a medium-sized mixing bowl. Add all remaining ingredients and stir to combine.
Enjoy as is or over a bed of fresh, chopped greens.
